Clean Days 5, 6, & 7

Whew. I wanted cookies, pizza, and chesseburgers today desperately. We’ve decided to stay on the elimination instead of going on to the two shakes a day which will be good. We may not completely go through the detox but we’ll at least benefit from eating primarily whole foods for a month. (I saw ‘we’- Michael ate a giant taco today and I wanted to punch him!) We moved this weekend and decided to cheat that night- you have to have pizza after moving all day… right? We got a big salad and split a small pizza so it wasn’t terrible! Tomorrow is our anniversary (2 years!!) so we’ll be cheating on our date night in Savannah too… o well, we’re eating so much better than we normally do!!

Tonight, instead of eating all the cookies, pizza, and cheeseburgers that I wanted so bad, I made a really tasty meal that my friend Katie told me about, chicken stuffed with spinach and artichoke! I also found a recipe for cauliflower rice on which was really tasty too! There isn’t any rice in it, you puree the cauliflower until it is a ricey consistency. Careful- I made a HUGE mess making this, mostly because I have a tiny food processor and cauliflower is messy to chop up.

For the chicken:

2 big hand fulls of spinach

1 can of artichokes, drained and chopped

4 cloves of garlic, diced

1-2lbs of chicken

nature’s seasoning

2 handfuls of almonds- pureed in the food processor until very fine

salt & pepper

Preheat the oven to 350. Saute the garlic until slightly brown, add the artichoke, then spinach and let it all cook down together. Meanwhile, pound out the chicken until about 1/2 an inch thick and sprinkle the insides of the breasts with nature’s seasoning. Puree the almonds and mix them with some salt and pepper. Once the spinach mixture is cooked down, line the chicken breasts with the mixture and roll them up. After placing 1-2 toothpicks in them roll them in the almonds. I thought you always had to dip meat in egg first to get coating to stick to it and I was so wrong! The almonds stuck just fine! Bake for 40-45 minutes.

If you decide to do this cleanse I definitely suggest doing it with someone. We have 4 other friends on it right now and helps so much to share ideas and encourage each other when we really want to cheat!
