Clean Days 3 & 4

Whoo hooo day 4!! Today I felt really full of energy and alert which was really awesome. I wanted to quit yesterday but today I feel great. Michael and I are still in the elimination phase, on Sunday we start the detox phase where you have one solid meal and 2 shakes (and of course snacks!) We’ve decided we’ll cheat a little on Monday though because its our anniversary!

Cooking for this has been really fun:

The shakes:

The past two days we’ve done frozen acai, blueberries, mango, hemp milk, hemp protein, raw cacao and ice. Pretty good, the hemp protein smells, looks, and tastes like dirt but the other flavors cover it up…

Lunch yesterday was a tuna sandwich (tuna, left over lemon-basil quinoa, pepper, & basic vinegarette by Cindy’s Kitchen) spinach & argula on gluten-free brown rice bread with rice chips, watermelon, and carrots. Watermelon is amazing. Amazing. I could eat a whole watermelon right now and then again in an hour…

Dinner: Homemade chicken black bean soup: (no recipe!!)

4 carrots, peeled and cut thin

4 celery stalks

3 cloves of garlic, diced

1/2 white onion, diced

3 cans of organic black beans, 11/2 mashed (undrained)

quart of chicken stock (I think… a regular sized mason jar- homemade stock by Meredith!)

1lb chicken thighs

nature’s seasoning

salt & pepper

Cook the chicken thighs in the slow cooker for 6-8 hours on low then shred. Saute the onions and garlic until onions are translucent, then add the carrots and celery. Shake nature’s seasoning liberally over all. Once the veggies are soft add the black beans, chicken stock, and shredded chicken. Add salt & pepper and a little more nature’s seasoning and simmer for 30 min!

We thought we would hate this cleanse but we’re starting to actually enjoy it- we still eat good and we feel good!
