Banana Muffins


I had some on-the-edge bananas this morning and decided it would be good to make some healthy muffins. I was really wanting bread and a banana so it seemed like a good idea! I found a really awesome recipe from that I tweeked a little bit and cut in 1/2 and they turned out really tasty!

The original recipe:

The recycled recipe:
  • 13/4 c whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp wheat germ
  • 3 tbsp ground flax
  • 1/3 c olive oil
  • 1/2 c agave
  • 2 eggs
  • 11/2 c mashed bananas
  • 1/4 c hot water
Grease a 12 count muffin pan, preheat oven to 325, and bake for 20 minutes- really tasty!
