I decided this week to go to the produce stand and figure out our meals depending on what they had. I ended up with a funny combination of food last night but it was tasty! Could definitely be a winter meal if there were no acre peas… I’ve started cooking chicken in the slow cooker when I know I have a busy day ahead of me and will need to be able to cook fast. It’s been really great because it leaves room for me to decide what I want to do with it later in the day and makes some natural chicken broth to use in whatever I decide as well!
For this meal:
1-2 lbs of chicken, slow cooked with a 11/2 cups of water and nature’s seasoning
1/4 onion diced
1 garlic clove, minced
1 8oz package of white mushrooms, sliced
1/2 cup heavy whipping cream
3/4 cup chicken broth from slow cooker
1 tbsp all purpose flour
a couple good shakes of Nature’s Seasoning
2 pinches of Thyme
salt & pepper to taste
Saute the onion and garlic in olive oil over medium heat until the onions are translucent. Add mushrooms and some salt and pepper and saute until cooked through. Add whipping cream, chicken broth, and flour, add spices, then reduce to simmer for about 5-10 minutes. I sliced the chicken- or tried, it was falling apart- and put the sauce on top. Slow cooker chicken is so tasty but doesn’t make for the best presentation!
wild rice cooked by package instructions (we added a little nature’s seasoning to that as well)
fresh acre peas from the produce stand, cooked with 1/2 stick of butter, water to just fill to the top of the peas, salt & pepper. Once the peas were done I added fresh sliced grape tomatoes

This meal was pretty tasty! It could definitely be a winter meal and maybe if I added more broth and another veggie and mixed the wild rice in- a really tasty chicken and wild rice soup! O yeah- and i didn’t use a recipe! Whoo-hoo!
