Well I said I would post the good, the bad, and the ugly… These weren’t necessarily the worst things e

ver but when I tell Michael to stay out of the kitchen, its a giant mess, and the food is falling apart then its, well, not the best recipe ever. I attempted to make empanadas and the flavor was ok except for being too sweet. The recipe calls for raisins and Mambos uses raisins, but they must be cooked down all day in some yummy cuban sauce.

The original recipe:

1 tbsp olive oil

1 small onion, chopped

1/2lb ground beef

1/3 cup golden raisins

2 tbsp ketchup

1/4 tsp ground cinnamon

salt & pepper

2 refrigerated pie crusts

1 large egg, beaten

The recycled recipe:

1/2lb beef

1/2 of a large onion, diced

2 gloves of garlic, diced

1/3 cup raisins- BUT I DON’T SUGGEST USING THEM- yuck.

1/2 of a carrot, shredded

1/2 cup diced tomatoes with juice

2 pinches of coriander & cinnamon

4 pinches or oregano, cumin, & red pepper

2 pie crusts

1 large egg, beaten

Saute the onions and garlic, when onions are translucent add the beef. ThenDON’T add the raisins, add the carrots, diced tomatoes w/ juice and spices. Roll out the pie crusts, cutting it into smaller circles, as big as you want your empanadas to be. Let the filling cool before putting in the pie crust. This was another of my mistakes, it was so hot it was coming through the crust. Brush the crust circles with water, put cooled filling on one side, fold over, and secure edges by pressing with a fork. Brush all the empanadas with the egg- do it evenly, another one of my mistakes- and bake at 375 for 20-25 minutes.
